Sunday Brunch @ Casa d’Amado: Buttermilk Pancakes w/ Drunken Raspberry Sauce, Egg Over Easy, Crispy Csabai Chips

Katis wanted American style pancakes.  I normally like to enjoy them with eggs and bacon, but we didn’t have any bacon, so I improvised using Csabai sausage instead.


Basic Buttermilk Pancake Recipe:

  • 1cup Flour
  • 1cup Buttermilk
  • 1large Egg
  • 1tsp Baking Soda
  • 1/2tsp Salt
  • 1tbsp sugar

Drunken Raspberry Sauce:

  • Frozen raspberries
  • Butter
  • Scotch/Whiskey
  • Sugar
  • Water as needed
  • Salt as needed

Start the raspberries with a knob or two of butter. Poor some whiskey and simmer until the alcohol is cooked out. Add sugar and continue to simmer to reduce by half. Add water and salt as needed. 

Rend the fat from sliced Csabai until the sausage slices are crispy. Use that fat to fry the eggs.
